TREES THAT FEED PLANTING ROOTS WORLDWIDE ....... a Jamaican non-profit changing lives for the better.
TREES THAT FEED is an organization, founded in Jamaica, by Mary McLaughlin, Mike McLaughlin, and Paul Virtue in 2008. The non-profit is changing lives through the planting of trees that feed people. This in turn creates jobs and benefits the local environment. Permanent and sustainable results are implemented through their work. Independent farmers, co-operatives and commercially successful operations are the success stories behind Trees That Feed.
Jamaica was the home base and place where their early work began and a model was developed. Through their work Trees That Feed are literally growing all over the world. They have now expanded into Haiti, Costa Rica, Barbados, Ghana and other countries. Trees That Feed Foundation has seen how tree crops can solve many of the world's serious food concerns. Tree crops are nutritious and require less labor, chemicals and space than many farming methods utilized today. Planting trees restores balance to the land, allowing humans and wildlife a more natural and beneficial environment to live in. Yellow Breadfruit Curry recipe by Sara Thompson - 1990 Kahanu Garden Breadfruit Cookoff HAWAII
3 tsp yellow curry paste
1 pd boneless chicken (or fish) cut into small strips
4 cups boiled mature breadfruit cut into 1 inch cubes
1 small sliced onion
4 tbsp fish sauce
2 tsp brown sugar or 1 tsp honey (optional)
1-5 yellow chilli peppers seeded and chopped
2 cups coconut milk
4 tbsp oil for cooking (sesame, coconut, olive oil recommended)
Heat oil in a skillet on high heat
Add yellow curry paste and heat until it bubbles
add remaining ingredients and simmer until chicken is boiled
*I replaced the chicken in this recipe with fish, and it was excellent.
